If you are needing fiber and omega 3s in your diet...
I have a tasty and easy way to get it:
Flax Meal Bowl Muffins 1 tbsp melted butter 1 egg 1 tbsp splenda or other SF sweetener 3 tbsp flax meal (golden or other) 1/2 tsp baking powder Flavorings: **if you want savory, add a bit of onion and garlic powder **if you want pastry type, you could add a bit cinnamon or pumpkin pie spice
Melt the butter in the microwave. Add the egg in and beat until fully incorporated. In a separate bowl, mix dry goods. Pour dry goods into bowl of egg and butter, stir in. Keep stirring until it looks uniform. This may take a minute or so.
Put it in the microwave for 2 minutes or so, until it looks cooked and dry on top. Take it out of the bowl and slice it. Use it as a muffin, with some butter and SF jam, use it as a burger bun, or just eat it. It's rather like a bran muffin.
From my experience, these do not reheat well. You may find a method that works for you. But these are so easy to make, that I just make them when I want them.
