My newest recipe, just made it tonight:
Parmesan Fried Zucchini
apx 1/2 cup parmesan (the kind from the shaker bottle)
oregano, to taste
S&P, to taste
In a bowl or container w/lid add parm and seasonings, stir it a bit.
Cook the zuc in a little oil in a pan that can go from stovetop to oven. Cook just until it's about 1/2 way done.
Remove from pan into bowl w/ parm mix. Put the lid on and shake it. Lay the zuc back in pan in a single layer. Bake at 350 till done...only about 10 minutes or so.
OMG, the flavor is faboo! I noticed that the bottom of the zuc got a more brown than on top, so I guess you could flip it half way through, but I didn't. This would be so good w/ a little ranch for dipping. It's great just as a side dish.
